Here's a good one to add to your soup repetoire. Really good winter soup.
Ingds:
1 1/2 T butter
1 1/2 c. leeks - thinly sliced
2 c. potatoes - peeled and diced
s&p
4 c. stock or water
1/2 c. cream
Method:
Melt butter in dutch oven. Add leeks and saute over medium heat - 5 mins. Add potatoes. Season. Add liquid. Simmer until potatoes are tender - 20 mins. Puree in blender or food processor. Return to pot, adjust seasoning, and add cream to desired consistency.
